”Slow down and take it all in” is the advice that  Nikki would give to all brides-to-be as they  prepare for their special day: “Our day was so  perfect, but it went so quickly,” she adds.  Nikki and James gave her brother Jason  free rein over key parts of theirwedding day  celebrations and they were thrilled with the  results. They ended up having two wedding  cakes, including a rather unexpected, yet  spectacular cheese tower.
